Corn Fritters

Yummy sweet-corn fritters thats dead easy to make. Serve with chilli sauce, tomato sauce or salsa.

Recipe ingredients

1 X 410 g can cream-style sweetcorn
1 cup self raising flour
1/4 cup low fat milk
3 eggs, separated
salt and ground black pepper to taste
2 tbsp chopped parsley
5 tbsp oil, to cook

Cooking Steps

  • In a large bowl, mix the cream style sweetcorn, flour, milk, egg yolks, salt and freshly ground black pepper and parsley together. In a separate bowl, beat the egg whites until stiff and fluffy. Fold these gently into the corn mixture.

  • Heat the oil in a large non stick frypan over medium to high heat. Cook spoonfuls of mixture for approximately 3 minutes each side until puffed up and golden brown. Drain on paper towels. Keep warm in the oven while you cook the remainder of the batch.

These brought back memories from my childhood=) Great with chopped up in the fritters over a salad with a bit of fruit chutney on the side...delish!

Oh my god!!! Best corn

Oh my god!!! Best corn fritters ever!!! I added red onion and capsicum .... Really yum with salad and a side of avocado .... Sour cream and sweet chilli sauce. My son is making them again tonight!!! Way better than ones bought from a cafe!!

Thank you for this recipe! I just made it, first time making corn fritters, it was really yum, crispy on the outside and fluffy and soft on the inside. Mine did flatten a bit after they cooled down though, is this supposed to happen? I didn't have self-raising flour so used normal flour with 1tsp baking powder.

Self-raising flour contains

Self-raising flour contains baking soda, baking powder, and tartaric acid. That may be why that flattened :)
