1 cup self raising flour
1/4 cup low fat milk
3 eggs, separated
salt and ground black pepper to taste
2 tbsp chopped parsley
5 tbsp oil, to cook
Cooking Steps
In a large bowl, mix the cream style sweetcorn, flour, milk, egg yolks, salt and freshly ground black pepper and parsley together. In a separate bowl, beat the egg whites until stiff and fluffy. Fold these gently into the corn mixture.

Thank you for this recipe! I just made it, first time making corn fritters, it was really yum, crispy on the outside and fluffy and soft on the inside. Mine did flatten a bit after they cooled down though, is this supposed to happen? I didn't have self-raising flour so used normal flour with 1tsp baking powder.
Self-raising flour contains
Self-raising flour contains baking soda, baking powder, and tartaric acid. That may be why that flattened :)
