Baba Ghanoush

Try this Arab dish of eggplant (aubergine) mashed and mixed with various seasonings. Use it as a dip with pita bread or just add it to your other Mediterranean dishes.

Recipe ingredients

1 large Eggplant
3 tbsp Tahini/ Sesame seed paste
1 tbsp Olive oil
1 tbsp Lemon juice
2 tbsp Garlic, minced
¼ tsp Paprika
4 dashes Tabasco sauce
2 tbsp Eggplant liquid
Salt and Pepper to taste

Cooking Steps

  • Preheat broiler and broil eggplant until evenly charred and soft, turning occasionally for about 40 minutes.

  • Transfer to a bowl for cooling. When cooled down, peel and reserve liquid in bowl.

  • Roughly chop and transfer to a mixing bowl where you will add all the remaining ingredients.

  • Adjust seasoning to taste and serve chilled or at room temperature.
