Easter truffles

This is a great almond and double chocolate truffles recipe.

Recipe ingredients

½ cup Cream
2 tbsp Sugar
200g Chocolate, chopped.
¼ cup ground Almonds
½ cup blanched Almonds, chopped.
200g dark Chocolate, melted for dipping

Cooking Steps

  • Combine the cream and sugar over low heat until the sugar dissolves. Now bring mixture to the boil and boil for about 4 minutes, stirring constantly.

  • Remove the cream mixture from heat and let stand for about 3 minutes, then add cooking chocolate and stir until completely melted. After cooling to room temperature, stir in chopped and ground almonds.

  • Chill the mixture until almost set and shape into balls, then chill until balls are firm. Dip truffles in melted dark chocolate and place on a tray lined with baking paper. Chill until chocolate sets and serve.
