Fresh Tomato Soup
Recipe ingredients
2 tbsp. margarine
1 cup dry white wine
2 cups fat free, chicken broth
¼ cup mint leaves, chopped
4 large tomatoes, chopped
1 tsp. Spice Blend
½ cup onion, minced
Pinch of sugar (optional)
Cooking Steps
Sauté the onion in the margarine over medium heat until just soft, add the tomatoes and heat through.
Puree the mixture in a food processor. Strain the pureed mixture through a sieve to remove the seeds.
In a medium pot, combine the puree mixture with the chicken broth, wine, spices, and sugar (optional). Simmer for about 15 minutes. Garnish with mint leaves.
