Lollie cake

Another New Zealand classic, Lollie cake recipe.

Recipe ingredients

1 packet malt biscuits
½ can condensed milk
3 tbsp butter
1 tbsp golden syrup
1 packet cocoa Eskimo lollies or fruit puffs coconut

Cooking Steps

  • Crush biscuits, cut lollies into slices and set aside. Combine condensed milk, butter and golden syrup into a pot and heat over low heat. When all ingredients are combined, mix in biscuit crumbs, roll onto a cutting board and press the lollies all over the mix.

  • Roll into a log shape, add coconut over cake then wrap in waxed paper and chill till set (approx 4hrs) Then ENJOY

Just wondering how much cocoa you need to use as it does not say how much you need as it kind of got mixed in with how many eskimos you need. thanks.

surely it would just melt... There is nothing in here that needs to be cooked. Only the melted liquid ingredients need to re-set

hi i always use mushmellows and i get the small ones for kids fluffies as it saves me heaps of time as they dont need cutting.
