Rhubarb pie

Stewed fruit Rhubarb pie.

Recipe ingredients

Pastry:
4 oz Butter
4 oz Sugar
8 oz Plain flour
1 tsp baking powder
1 Egg

Filling (stewed rhubarb):
2 cups Rhubarb, cubed.
¼ cup water
2 Tbsp Sugar (to taste)

Cooking Steps

  • Pastry:
    Mix the butter and sugar together.

  • Add egg, flour and baking powder.

  • Mix together using your fingers and hands.

  • Roll out onto a lightly floured board and place in your (8 inch or 20 cm) pastry dish.

  • Filling (stewed rhubarb):
    Bring the rhubarb cubes and water to a slow boil and simmer for about 8 minutes.

  • Add sugar and stir while simmering for a further few minutes.

Thanks Jo, when I tried this recipe it turned out great (even the lattice) and tasted real yummy. I used chemical-free rhubarb from my own garden. :)
