Ravioli in a Basil cream and wine sauce

Rich creamy sauce with wine finished off with grated parmesan cheese and fresh basil, ideal with Ravioli, tortellini, fettuccine, as a main dish or a side with your favorite steak.

Recipe ingredients

30g butter
1 shallot finely chopped
1 small glove garlic crushed
300ml cream
60ml white wine
1-2 tbls tomato paste
1 cube vegetable stock
salt
fresh basil
Parmesan cheese
Ravioli, home made or bought

Cooking Steps

  • Melt butter and saute shallots and garlic until soft.

  • add crumb stock cube, cook another 1 minute

  • add wine and reduce for 1-2 minutes

  • add cream and tomato paste simmer for 1-2 minutes until thick

  • season to taste

  • Pour over pre-cooked ravioli

  • sprinkle parmesan over and garnish with fresh basil

  • Buon appetito
