Rack Of Lamb recipe
Recipe ingredients
2 tbsp Rosemary, chopped
4 Lamb Racks, trimmed and french'd
6 Garlic Cloves, peeled
¼ c Parmesan Cheese, grated
7 Medium Potatoes, peeled & cubed
4 tbsp Dijon Mustard
½ tbsp Milk
2 tbsp Butter
2 c Breadcrumbs
2 tbsp Garlic, crushed
2 tsp Salt
2 tsp Cracked Pepper
2 tbsp Olive Oil + ½ C Olive Oil
Cooking Steps
Preheat oven to 450 °F (230 °C). Move oven rack to the center position. In a large bowl, combine bread crumbs, garlic, rosemary, 1 tsp salt and 1 tsp pepper. Toss in 2 tbsp olive oil to moisten mixture. Set aside.
Season the rack all over with another teaspoon of salt and pepper. Heat ½ cup additional olive oil in a large heavy oven proof skillet over high heat. Sear rack of lamb for 1 to 2 minutes on all sides. Set aside for a few minutes. Brush rack of lamb with the mustard. Top with the bread crumb mixture until evenly coated.
Cover the ends of the bones with foil to prevent charring. Arrange the rack bone side down in the skillet. Roast the lamb in preheated oven for 12 to 18 minutes. Remove the meat, or let it cook longer, to your taste. Let it rest for 5 minutes, loosely covered in a warm area. Serve with roast garlic mashed potato and freshly made rosemary gravy.
Roast Garlic Mashed Potato Directions:
Preheat oven to 175 °C. Place garlic cloves in a small baking dish. Drizzle with olive oil, cover, and bake 45 minutes, or until golden brown. Bring a large pot of lightly salted water to boil.Add potatoes, and cook until tender but firm. Drain, and transfer to a large mixing bowl. Place roasted garlic, milk, Parmesan cheese, and butter into the bowl with the potatoes. Season with salt and pepper. Beat to desired consistency with an electric mixer.
