Casserole de Scallop

Casserole recipe with scallops, onions, asparagus and cheese.

Recipe ingredients

500gm Scallops
¼ cup chopped onions
2 Tbls melted butter
(420g) 1 can mushroom soup
1 bunch asparagus, cut into one inch lenths
1 cup bread cubes
½ cup milk
1 tsp curry powder
Sprig parsley
¼ tsp pepper
2 Tbls butter, melted.
1 cup cheese, shredded
lemon rind, grated

Cooking Steps

  • Thaw scallops if frozen, wash then drain well. Simmer scallops in boiling water and drain. Saute onions, add soup, milk, curry, pepper and half of the cheese, stirring continuously until cheese melts.

  • Slice scallops and add to soup mix along with asparagus. Dip bread cubes in melted butter and sprinkle with remaining cheese.

  • Bake at 215 degree C for 30mins or until golden. Remove from oven and sprinkle with chopped parsley and lemon rind, before serving.
