Beetroot thyme sauce
Recipe ingredients
½ onion roughly chopped
450g can of baby beets-I use golden circle
chicken or vegetable liquid stock
3-4 sprigs of fresh thyme
knob of butter
1-2 tblsp of lemon juice
cornflour
salt
Cooking Steps
Saute onions in butter, but do not brown in heavy sauce pan.
Drain beetroot juice into jug add same amount of stock.
Add beet juice & stock and thyme to onions. Cook slowly and reduce.
Strain, add back into clean sauce pan, reduce further until it thickens, add cornstarch (mixed in water) if required.
Add 3-4 baby beets per person and lemon juice.
Season to taste.
Serve over eye fillet or venison. Or fried tofu strips for vegetarian option.
