Rice Pudding

Rice Pudding recipe.

Recipe ingredients

½ cup (100g) medium grain rice
5 tbsp sugar
2 egg yolks
1 lemon or orange, finely grated rind and juice
1 litre Milk
¼ teaspoon salt

Cooking Steps

  • Place the milk in a saucepan and slowly bring to the boil. Beat the egg yolks and sugar together in a large bowl and carefully pour over the hot milk while beating constantly. Return to the saucepan with the rice, lemon or orange rind and salt. Slowly simmer for 1¼ hours stirring regularly.

  • For orange chocolate chip pudding, use orange rind and juice and ½ cup of chopped chocolate.

  • For lemon and raspberry pudding, use lemon rind and juice and ½ cup of raspberries.

  • Remove the rice pudding from the heat and stir in the lemon or orange juice and chocolate or berries. Divide the pudding between 4 individual serving dishes. Serve warm or chill until needed. Top with a few extra pieces of chocolate or raspberries if desired before serving.
