Date pudding with Butterscotch sauce

Stay warm with an easy to make, sticky date pudding served steaming hot with yummy butterscotch sauce.

Recipe ingredients

125g Butter or Margarine
¾ cup Caster sugar
2 Eggs
1¼ cups self-raising flour, sifted
1 cup Dates, finely chopped
pinch of salt
2 - 3 tbsp Milk
½ cup Brown sugar
1 cup boiling Water
Butterscotch Sauce
2 cups Brown Sugar
1 cup cream
50g butter
1 teaspoon vanilla essence

Cooking Steps

  • Preheat your oven to about 190 °C.

  • Cream butter and caster sugar until light and fluffy and beat in eggs one at a time.

  • Fold in flour and salt alternately with the milk.

  • Gently stir in the chopped dates.

  • Spread evenly in a greased ovenproof dish.

  • Sprinkle with brown sugar and pour the boiling water over the top.

  • Bake for about 35 to 40 minutes and serve hot.

  • Butterscotch Sauce: - Combine all ingredients in a saucepan and stir over a low heat until the Brown Sugar has dissolved and the butter melted.
