Apple Jonathan
Recipe ingredients
8 to 10 tart cooking apples, peeled, cored, and thinly sliced (6 cups)
½ c. pure maple syrup
1 c. flour
2 tsp. baking powder
1 tsp. finely shredded orange peel
½ tsp. salt
½ c. sugar
¼ c. butter
1 egg
½ c. orange juice
Unsweetened Whipped Cream
Thin orange slices, cut in half
Cooking Steps
Preheat oven to 350 °F.
In a bowl toss apples with maple syrup until well coated. Spread evenly in a 10x6x2-inch baking dish or a 1-1/2-quart au gratin dish. Bake, covered, for 25 minutes.
Meanwhile, for batter, stir together flour, baking powder, orange peel and salt.
In small mixer bowl beat sugar and butter until light and fluffy. Beat in egg. Add dry ingredients to beaten mixture alternately with orange juice, beating well after each addition.
Spread the batter over the hot apples, return to oven. Bake, uncovered, for 25 to 30 minutes longer or until it test done.
Serve warm or cool. Top with dollops of unsweetened whipped cream and halved orange slices.
