Red Velvet Cupcakes
Recipe ingredients
2¼ cups Sifted flour. (sift before measuring)
2 tbsp Cocao powder, unsweetened.
1 tsp Baking powder
1 tsp Baking soda
½ tsp Salt
1 cup Buttermilk
1 tsp Red food colouring.
1 tsp White vinegar
1 tsp Vanilla extract
1½ cups Sugar
½ cup (1 stick) Butter at room temperature.
2 Large eggs
Icing / Frosting
450g (16 ounce) Cream cheese at room temperature.
½ cup (1 stick) Butter at room temperature.
1 tbsp Vanilla extract
2½ cups Powdered sugar (Icing sugar).
Cooking Steps
Sift sifted flour, cocao powder, baking powder, baking soda and salt into a mixing bowl.
Add food colouring, vinegar and vanilla to a bowl and whisk / blend.
With an electric mixer, mix together sugar and butter, then add eggs 1 at a time, mixing well between each additional egg.
Now mix in dry ingredients in 4 additions alternately with buttermilk mixture in 3 additions.
Prepare 2 x (12 hole) muffen tins by lining them with cupcake paper-linings.
Preheat your oven to 180°C (350°F) and bake for about 15 minutes or until a thoothpick comes out clean when skewered.
Icing / Frosting
Mix together cream cheese and butter, mix in vanilla now add in the powdered sugar and beat until smooth.

I didn't like the red velved
I didn't like the red velved cake-base that much, unless it was raspberry flavor of course but the cream cheese frosting was soooooo good.
