Cumin and Lemon Baked Chicken
Recipe ingredients
1 red onion, peeled and sliced
3 courgettes, wiped and sliced
1 green pepper, sliced
400g can Sweet Chilli Style Tomatoes
1/2 cup chicken stock, water or white wine
35g jar Spiced Cumin & Lemon Seasoning
4 Chicken leg / thigh portions, trim any excess fat
1 tbsp freshly chopped coriander or parsley to garnish
Cooking Steps
Layer the prepared red onion, courgettes and green pepper in a lasagne style dish.
Spoon over Sweet Chilli Style Tomatoes and chicken stock.
Arrange the chicken over the vegetables and tomatoes.
Bake at 200 degrees C for about 45 minutes or until the chicken is golden and cooked through. Garnish with the coriander and serve with rice or couscous.
