Coconut Chicken Curry

Beautiful Indian chicken curry recipe. I love both curry and coconut so this recipe is on of my many favorites.

Recipe ingredients

3 Cloves
2 tbsp Vegetable oil
3 Green, cardamon pods.
2 Onions, chopped.
½ tsp Mustard powder
1 tbsp Ground cumin
3 Cloves garlic, crushed.
15g Ground coriander
¾ tsp Ground turmeric
1 tsp Chilli powder
1 tsp Ginger pulp
About 1kg skinned, boneless chicken, cut to bite-sized pieces.
600ml Coconut milk
Salt
Juice from half a lemon.

Cooking Steps

  • Heat the Oil together with the Cloves and Cardamon pods for about a minute.

  • Then add Onion and Garlic and fry for about 10min or until onion is translucent.

  • Add all the remaining Spices and Ginger and sprinkle over 100ml of water.

  • Cook over low heat for about 5min, then add the Chicken and fry for another 2 to 3 minutes.

  • Now add the Coconut milk and continue cooking over a low heat for about 30min or until the chicken is cooked.

  • Add the Lemon juice and season. Serve with your favorite vegetables and rice.
