Coconut Chicken Curry
Recipe ingredients
3 Cloves
2 tbsp Vegetable oil
3 Green, cardamon pods.
2 Onions, chopped.
½ tsp Mustard powder
1 tbsp Ground cumin
3 Cloves garlic, crushed.
15g Ground coriander
¾ tsp Ground turmeric
1 tsp Chilli powder
1 tsp Ginger pulp
About 1kg skinned, boneless chicken, cut to bite-sized pieces.
600ml Coconut milk
Salt
Juice from half a lemon.
Cooking Steps
Heat the Oil together with the Cloves and Cardamon pods for about a minute.
Then add Onion and Garlic and fry for about 10min or until onion is translucent.
Add all the remaining Spices and Ginger and sprinkle over 100ml of water.
Cook over low heat for about 5min, then add the Chicken and fry for another 2 to 3 minutes.
Now add the Coconut milk and continue cooking over a low heat for about 30min or until the chicken is cooked.
Add the Lemon juice and season. Serve with your favorite vegetables and rice.
