Cacciatore Chicken Casserole
Recipe ingredients
4 cloves Garlic, finely chopped
2 Onions, diced
1 Chicken stock cube (or homemade chicken stock)
2 Chicken breasts, de-boned and cut into bite sized bits
125 grams (3 cups) Shitake mushrooms, halved
125 grams (3 cups) oyster mushrooms, halved
Oil for frying
400 grams Chopped tomatoes
2 tbsp plain flour
salt and pepper
dried or fresh rosemary
Cooking Steps
Coat the chicken by placing it in a bag together with the salt, pepper, flour and rosemary.(shake bag to coat)
Heat your oil in a frying pan and fry the chicken in batches until lightly browned, then place in a casserole dish.
Now add onions ,garlic, mushrooms and the tomatoes to the casserole dish.
Add chicken stock to cover the ingredients and cook the casserole in the oven for 1½ hours at 180 °C or 350 °F
