Mixed Berry Cake with Velvet Sauce
Recipe ingredients
125g butter
1 cup caster sugar
1 tsp vanilla essence
2 eggs
Zest of ½ lemon
1½ cups self raising flour
1½ cups Orchard Gold mixed berries
Icing sugar
Velvet Sauce:
1 cup Orchard Gold mixed berries
1 tbsp icing sugar, or to taste
Cooking Steps
Preheat the oven to 160°C. Grease or spray a 22cm cake tin and line the base with baking paper.
Soften the butter and place in a bowl with the caster sugar and vanilla essence. Beat until light and creamy.
Add the eggs and beat well. Stir in the lemon zest.
Sift the self-raising flour and fold into mixture, then spoon into the prepared cake tin.
Scatter the mixed berries over the top.
Bake for 55-60 minutes until cooked and golden - test with a skewer. Take out of the oven and cool.
Velvet Sauce: Place the berries in a saucepan and gently warm through on a low heat. Sieve to remove seeds. Add icing sugar and blend for a few seconds to foam the puree. Cool.
Remove from the tin and dust with icing sugar prior to serving with Velvet Sauce and whipped cream.
