Carrot Cake

Carrot Cake

Delightfully moist cake, keeps well and will also freeze sucessfully. Top with whipped cream, cream cheese or icing.

Recipe ingredients

1 ½ cups oil
2 cups brown sugar
2 teaspoons cinnamon
4 eggs
1 teaspoon vanilla
2 cups whole-meal flour
1 teaspoon salt
3 cups finely grated carrot
1 cup chopped walnuts
2 small teaspoons baking soda
Icing:
cream cheese
icing sugar
vanilla
melted butter
lemon juice

Cooking Steps

  • Mix well oil, sugar and cinnamon then whip eggs and vanilla and combine.

  • Mix flour, carrot, salt and walnuts together.

  • Combine two mixtures and fold in baking soda.

  • Pour into an 8 or 10 inch cake tins and bake at 350 °F for approx 55min.
