Whole orange muffins

Healthy whole orange muffins recipe with dates. Add poppy seeds, chocolate or any other bits you like.

Recipe ingredients

Wet:
1 orange (about 200grm)
½ cup sugar
1 egg
½ cup milk
½ cup oil

Dry:
1 cup plain flour
1 cup wholemeal flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup chopped dates

Cooking Steps

  • Cut orange into 8 pieces and blend together with sugar and all other wet ingredients.

  • Mix up the dry ingredients and add chopped dates.

  • Fold both mixtures together but don't stir too much. Put into muffin tin and bake for about 15min at 200°C

Excellent Muffins. Easy to make dairy free by using rice milk.
And 1/2 cup chocolate chips added definitely gets the kids interested.
I used rice bran oil.

I swapped the dates for

I swapped the dates for chopped dark chocolate, and used 1/4 cup oil and 1/4 cup squeezed orange juice (about 2 oranges worth) instead of 1/4 cup oil. These were delicious and i will definitely be making again!!
