Traditional Soda Bread

Another quick and easy recipe for picnics - serve with fresh, slightly salted butter.

Recipe ingredients

1lb plain flour
2 level tsps bicarbonate of soda
2 level tsps cream of tartar
½ pint milk mixed with 1 tbsp lemon
1 tsp salt
1oz lard
1 tsps caster sugar

Cooking Steps

  • Sift dry ingredients into a large mixing bowl. Rub lard into the flour with fingertips until the mixture resembles fine breadcrumbs. Mix in the sugar. Make a well in the centre of the flour and add the soured milk. Mix into a firm dough. Turn dough onto a floured surface and knead lightly for a couple of minutes.

  • Shape into a 7" round, flatten slightly and then score the surface into 6 sections with a round bladed knife. Place loaf on floured baking tray and bake in the centre of a moderate oven (Gas Mark 6, 400F, 200C) for about 30 minutes. Cool on wire tray.
