Cranberry and Walnut Muffins
Recipe ingredients
1 cup plain flour
1 cup Whole wheat flour
2/3 cup Sugar
2 tsp Baking powder
½ tsp Salt
2/3 cup Milk
¼ cup Oil
1 tsp Orange zest
1 tsp Vanilla essence
1x Egg
2 cups Cranberries (½ coarsely chopped and ½ whole)
½ cup toasted Walnuts
Cooking Steps
Preheat your oven to 200 °C or 400 °F.
In a bowl mix together all the dry ingredients; flour, sugar, baking powder and salt. Set aside and start on your wet ingredients in another bowl.
Now whist together all the wet ingredients; milk, oil, orange zest, vanilla and egg.
Add the wet ingredients mixture to the dry mixture and combine the two.
Now you can mix in the Cranberries and Walnuts. Scoop into a muffin tray and bake for 20 minutes.

what if I don't have any cranberries, can I use fresh raspberries instead?

thanks, I will give it a go, I don't think you can buy fresh cranberries here in Australia, I haven't seen them anywhere in the shops ever. Will give the raspberries a try though.
