Choc chip Mandarin muffins

Baked muffins with mandarin, chocolate, orange and coconut. Original recipe by, Connie Clarkson.

Recipe ingredients

3 cups flour
3 tsp baking powder
¾ teaspoons salt
1 tsp soda
1 cup sugar
2/3 cup vegetable oil
1 cup orange juice
2/3 cup chocolate chips
8 oz mandarin wedges cut into small pieces (about 4 - 5 mandarins)
2 eggs
Topping:
1 cup shredded coconut
1/3 cup soft brown sugar
2 tblsp melted butter

Cooking Steps

  • Mix the sugar and oil together, beat in eggs, add the orange juice, chocolate chips and mandarin wedges.

  • Add all the dry ingredients and stir until just blended. Now scoop the batter into paper-lined muffin tins.

  • Preheat oven to 375 degrees C.

  • Mix the topping ingredients and sprinkle over the muffin batter.

  • Bake for 15 to 20 minutes until golden brown.
