Mince tacos
Recipe ingredients
80g Beef mince
1 clove Garlic
½ tsp chilli powder
¼ tsp ground Cumin
300g kidney Beans, rinsed and drained
2 tbsp Tomato paste
125ml Water
150g (1) Tomato, coarsely chopped
4 Taco shells
Small mound shredded Lettuce
Salsa cruda
½ lebanese cucumber, seeded and chopped finely
½ small red Onion, finely chopped
1 Tomato, finely chopped
1 tsp mild or hot chili sauce
Cooking Steps
Preheat oven to about 180 degrees C. Heat a large lightly oiled non-stick frying pan and cook garlic and mince, stirring until mince is cooked completely.
Now add chili, beans, paste, cumin, the water and tomato. Cook covered on low heat for about 15min. or until mixture thickens slightly.
Place taco shells, upside-down on an oven tray and heat uncovered for about 5min. Combine the ingredients for the salsa cruda in a small bowl.
Shortly before serving, fill taco shells with mince mixture, lettuce and salsa cruda.
