Mince Pie recipe
Recipe ingredients
1 Sheet Flaky Pastry
1 Carrot, thinly sliced
1 tbsp Rosemary, finely chopped
600g Beef Mince
250ml Beef Stock
½ c Frozen Peas
Zest of 1 Lemon
1 Beaten Egg for brushing
¼ c Frozen Corn Kernels
Salt to taste
Black Pepper, to taste
1 tsp Flour
1 tbsp Tomato Paste
3 Cloves Garlic, finely chopped
2 Tbsp Olive Oil
1 Onion, chopped
Cooking Steps
Preheat the oven to 200°C. Cut the pastry sheet into 4 equal squares and brush the top of each with beaten egg. Put the squares on a tray, place in the oven and bake then remove from the oven and cool.
Heat the oil over moderate heat in a deep frying pan and add the onion, carrot, zest, garlic and rosemary. Fry gently, without browning, until the onion is soft.
Add the mince, turn up the heat and fry, breaking up the lumps, until the mince is browned.
Mix in the flour and tomato paste then add the beef stock. Simmer 10 minutes then add the peas and corn.
Simmer another 4 minutes, season to taste with salt and pepper and reheat the pastry squares in the oven.
Slice the pastry squares in half horizontally and serve the mince in between the pastry halves.

All the stuff in this recipe can be frozen and used again another time. It might be a good idea for students :glasses: or people like me who don't like shopping :p .
