Greek Shepherd's Pie
Recipe ingredients
2 medium onions, chopped
2 tbsp oil
400g lean beef mince
1tbsp parsley, chopped
400g can chop tomatoes
500g (2 - 3 average) potatoes
50g butter
1 and half tbsp plain flour
1 cup milk
Quarter cup grated cheese
Cooking Steps
Firstly fry the onions over gentle heat until soft, now add the mince and parsley, stirring until the meat browns. Add tomatoes, season with salt and pepper and simmer for 5 minutes. Peel and thinly slice the potatoes. Then place a layer of the meat mixture in the bottom of a 1 liter capacity ovenproof dish.
Top the layer of meat with potato slices and then spoon another layer of meat over the top. Layer until all the meat mixture is used up and finish with a layer of potato.
Melt butter in a saucepan, stir in the flour and gradually add milk to make a white sauce. Season with salt and pepper and stir in the cheese. Now pour the sauce over the potato in the ovenproof dish and gently shake the dish so the sauce works its way through. Grate some extra cheese on top and bake under moderate heat for about 1hr 15min or until potatoes are cooked.
